BARBECUED OYSTERS PACIFIC HEIGHTS
STYLE

Modify your oysters!

Barbecue Sauce:

  • 1 tsp. minced fresh ginger.

  • 1 tsp. Thai chili paste* (*available in Oriental and specialty food shops).

  • 2 tbsp. soy sauce.

  • ¼ cup fresh lime juice.

  • 2 cloves garlic, minced.

  • 1 tsp. sesame oil.

  • 1½ cups light fish stock or chicken broth.

  • Salt to taste.

Additional Ingredients:

  • 16 fresh oysters on the half shell.

  • 2 green onions, finely minced.

  • Rock salt or bed of julienne-cut cabbage leaves for serving plates.

Instructions:

  1. Prepare Barbecue Sauce: In a bowl, combine minced fresh ginger, Thai chili paste, soy sauce, fresh lime juice, minced garlic, sesame oil, light fish stock or chicken broth, and salt to taste. This sauce can be made ahead of time.

  2. Preheat Grill: Place the barbecue grill rack about 3 inches from hot coals and preheat.

  3. Grill Oysters: Arrange the fresh oysters on the half shell directly on the hot barbecue grill.

  4. Top with Barbecue Sauce: Spoon 1 tablespoon of the prepared barbecue sauce over each oyster on the grill. Grill until the oysters are hot and the sauce becomes bubbly.

  5. Transfer to Serving Plates: Carefully transfer the barbecued oysters to serving plates.

  6. Sprinkle with Green Onions: Sprinkle the finely minced green onions over the hot oysters.

  7. Serve: Serve the Barbecued Oysters Pacific Heights Style on a bed of rock salt or julienne-cut cabbage leaves for an elegant presentation.

This recipe serves 4 and makes for a flavorful appetizer or main dish.
