SOUTHERN-STYLE PEANUT AND OYSTER SOUP

Ingredients:

3 tbsp. sweet butter.

½ cup smooth peanut butter.

2 cups chicken stock.

1 tsp. chopped fresh savory.

Salt to taste.

24 oysters, shucked, liquor reserved.

5 green onions, minced.

2 tbsp. flour.

½ cup heavy cream.
-
1/8 tsp. cayenne pepper.

3 tbsp. dry sherry.

¼ cup chopped parsley.

Instructions:

Sauté Green Onions: In a heavy-bottomed 2-quart saucepan, melt 3 tablespoons of sweet butter. Sauté the minced green onions on medium heat for about 2 minutes.

Add Peanut Butter and Flour: Blend in ½ cup of smooth peanut butter, then add 2 tablespoons of flour. Cook, stirring constantly, for 3 minutes.

Gradually Add Stock and Oyster Liquor: Turn the heat to very low and gradually whisk in 2 cups of chicken stock and the reserved oyster liquor. Increase the heat and simmer for 12 to 15 minutes, stirring often.

Season the Soup: Add chopped fresh savory, salt to taste, and stir well. Then, add 1/8 teaspoon of cayenne pepper and ½ cup of heavy cream.

Stir in Sherry: Stir in 3 tablespoons of dry sherry.

Add Oysters: Add the shucked oysters to the simmering soup. Cook for 1 to 2 minutes, just until the oysters are heated through.
